Blueberry Cake || Eatz

I went blueberry picking with my aunt and uncle last sunday. The farm that went to was filled with bushes full of blueberries. We decided to head to the back of the huge field since not a lot of people want to trek in that direction. And for the next hour and a half, we spent picking the biggest ones we could find (which wasn't too hard to find). It was so nice to see these big and plump blueberries just waiting to be picked. Not going to lie, I did quite a lot of eating while I was picking. But that's all the fun with u-pick!




It's been a week and a bit since I picked, and one out of the two buckets has been eaten. I thought that I would bake a cake before they all disappear. I love cakes with fruit and especially blueberries. This is just a simple white cake with a twist -- crumb coat! Usually I make crumb coats for fruit crumbles but I remember, back when I lived on campus, I made a cake like this and I thought I'd give it another go. Cake, crumbs, fresh blueberries mmmm. You can always use frozen berries but make sure you thaw it out and drain the water out so that your cake won't get soggy.


Crumb coat:
1. Mix all the ingredients (excluding butter) with a whisk until there are not clumps.
2. Add cold butter and use two knives to cut the butter into the flour mixture. You should end up with small chunks of butter. It's okay if your chunks are bigger -- no smaller than a pea.
3. We want to keep the crumb coat cold, so put it in the fridge until it is assembling time.


Cake:
1. In a separate bowl, mix flour, baking powder and salt (if you are using non-salted butter).
2. In another bowl or your stand mixer, beat butter until smooth.
3. Add sugar and beat until light and fluffy.
4. Slowly add flour mixture and milk into the butter sugar mixture. Best way to do it is add 1/3 of the flour mixture and then 1/2 of the milk. Repeat this step until everything is incorporated. Do not over-mix or your cake will get a really gummy texture.



For easy transfer from pan to plate, I learned a little trick. All you will need is some parchment paper. Take a 9x9 pan and measure out your parchment paper just enough that it will cover the bottom and the sides. Cut your parchment in half lengthwise. Lay one sheet of parchment into your pan and lay your other sheet on top of the first one but perpendicular to the first. You should now have fully lined pan with little parchment "handles" on all four sides.



Assembling Time!
1. Take your lined 9x9 pan and pour cake batter into it. Even it out so that it fills in all the corners level it out. I used and offset spatula but you can used a regular butter knife or the back of a spoon. to make sure you don't get any batter onto your weapon of choice, spray it with some vegetable oil.


2. Place your blueberries on top of the batter. Make sure that the blueberries are evenly distributed or else someone is going to get a piece of cake without the star of the show. I gently pushed my blueberries into the batter so that it is 50% submerged. That way, the juices from the blueberries will be absorbed into the cake.


3. Sprinkle the crumb coat on top of the blueberries until fully covered. Don't pack it in or else it'll be super dense. Just let the butter work its magic :)



Put your cake into the oven and let it back for 40-45mins. To check to see that it's done, take a toothpick or a cake tester and stick it into the cake. If it comes out clean, and there aren't any crumbs stuck on it, you can take it out. Let it rest on a cooling rack.



You can eat this warm or cold, by itself or with whipped cream or even ice cream. Because it is a denser cake, don't make your servings too large.


I love the different layers! A simple yellow cake with fresh local berries and top it all off with a final layer of warm crispy crust. Mmmmm!

Japanese "Kawaii" Inspired Nails || Nail Art

Hi everyone!

I am so sorry for not posting in such a looooooong time! It's been a busy busy busy week and haven't been able to do anything super exciting. I do have some pictures that I took when I went down to Vancouver for a bike ride; I'll post them up soon.

The BC lions are playing tonight and I thought I should start watching again. I got so bored of the game (nothing was going on...so many turnovers) and decided to do my nails while watching. I didn't end up doing step by step photos but here is just a quick snap!

I decided to go kawaii all over my nails. I'm not much of a person who loves pink but I put it all over my nails anyways.

On my thumb and middle finger I just did simple white polka dots on a pink base. On my index and pinky finger I had the same pink base but used rose gold/copper glitter on top. On my ring finger, I had a peach/cream base and painted on a baby pink bow and put a pearl in the middle.

I hope to get a back into the step by step nail tutorials soon so stay posted. Last week, I posted a picture on my Instagram; I did vintage rose inspired nails last week but forgot to take pictures. I think that will be my next nail art tutorial. But I also have two other summer 2013 polishes to review...oh the choices. Alright have an amazing weekend and I'll talk to you guys next time!

Banana Muffins || Eatz

I love me some banana bread! My mom works at the local hospital and, sometimes, she brings back super ripe bananas because the hospital can't use them to feed their patients. She looked in the freezer this morning and found freezer bags full of bananas; I guess it's about time to make some banana bread. My mom likes to bake them in loafs or mini loafs (which look really cute) but I prefer mine in muffin form. I like to stick one in my purse (wrapped in plastic wrap of course) when I don't have time to eat breakfast. 

Got my music turned up and I'm ready to get my hands dirty!



Makes 30 cupcake-sized muffins.

1. Pre-heat your oven to 350°C with the racks in the middle. While you are pre-heating your oven, put your walnuts on a tray so that they are ready for toasting! When oven is done pre-heating ("beep"), stick your walnuts in the oven and set timer for 5-7 minutes. Take out and let it cool. Roughly chop the walnuts into chunks. Set aside


2. In a small sauce pan, melt your butter until it becomes a translucent liquid. Take off heat and let cool. You're going to see some white film/foam on the surface of your melt butter. Scoop it out and now you're left with clear melted goodness. Set aside.


3. Take out your mixer (bowl and wooden spoon if you are old school), and mix all your dry ingredients including the walnuts. Mix until well incorporated.


4. In separate bow, mash your bananas. If your bananas are frozen like mine, make sure that they are room temperature before mashing or it will take you forever! You can use your food processor if you like. Either way, do not mash/process it until it becomes a purée; if it looks like baby food, you've gone too far. Add your eggs, vanilla, and cooled down butter. Make sure it's cool or else you'll end up getting scrambled eggs in your bananas. Mix well.


5. Add your wet ingredient into your dry ingredients. Mixer: set it to the lowest setting. Using a wooden spoon? Fold your wet ingredients into the dry. Make sure that all your dry ingredients are mixed well in your batter; you don't want to have lumps of flour in your muffin. Your batter should look chunky; if you mix it until it's smooth, your muffins will have a rubbery texture.

6. Fill your pre-lined muffin pan with batter. I'm using a 1" cookie dough scooper and it was just around two scoops per muffin cup. If you're just eyeballing it, I would fill it just over 2/3 of the way. Top off each muffin with a whole walnut or chopped walnut pieces.


7. Put them in the oven for 20 - 25 minutes; rotate them half way through. Take a toothpick and stick them through the muffins to make sure that they're done. You know when they're all done when the toothpick comes out looking clean -- if there are crumbs stuck to it, put it back in for an extra minute or two.


8. Let them cool off in the pan for 5 minutes and then let them rest for an addition 30 minutes on a rack before putting them into containers.

There you have it! Best when it's serve warm with some butter. Mmmmm!

Black on Black Zebra Print || Nail Art

Wondering how black on black works right? I'll tell you my litte secret in just a sec!

Back when I first starting wearing nail polish, black was definitely one of my favorite picks. I guess it was because it matched everything (which was true). I was more a jeans and t-shirt person and didn't like to dress up so black was a very safe option. I have definitely seen changes in what I wear now and black wouldn't be my first pick. And just looking at my polish collection, most of my colours are now pastels and brights. Honestly, I have to say that I haven't worn black, as a primary colour, on my nails for at least two years. I think it's because I chip my nails really fast and chipped black polish stands out like a sore thumb. And now that I work in a school environment, black is not the most professional either.

This tutorial looks hard but it's actually quite simple. The different finishes and the print makes a plain black nail much more sophisticated and I will say that it will definitely be a conversation starter.


Polished used:
OPI Natural Nail Base Coat
LA Colors Art Deco Striper in Black
Revlon Colorstay in 270 Stiletto
Nails Inc. Matté Finish in Westminster Bridge Topcoat

Apply your base coat and your black polish. I only had to apply one layer of my black polish. Give it some dry time.


Next, apply a layer of your matté finish. Give it some more dry time. See how it's no longer glossy? If you think that it's still semi glossy, give your nails another coat. This step is very important. Nails Inc.'s Westminster Bridge Topcoat was a huge hit when matté finishes first came out. I definitely recommend this one.


The next step you can either use a striper or, if you don't have a striper, use the same black polish and a toothpick. On top of your, now matté, black, take your striper or dipped toothpick and make zebra stripes. And give it some dry time and you're done! See how the glossy strips stand out against the matte base! Cool eh?



DO NOT FINISH IT OFF WITH A TOP COAT OR YOU WILL RUIN THE MATTÉ FINISH!
Note: this won't last long. Since there is no final top coat, it's going to chip. This is my second day and I'm already seeing chips here and there.

Zebras are one of my favorite animals because of it's stripes!

Essie Bikini So Teeny || Manicure Weekend

Good Morning!

First Essie review! I was at Walmart this past week and picked up a few Essie polishes; they were a $1 off each! Besides their wall display, they had a freestanding display of polishes including their new summer neon and nautical collection. It took me so long to pick out the ones I wanted! The one that I'm reviewing today is not part of the new summer collections so stay tuned!



So I think this is my new favorite summer colour! Essie's website says it's a "daring meets darling in pretty yet provocative cornflower blue" and they're right. If you are a person who likes their pastels like me, this colour is right up your alley. I love my mints, which I guess you can say is the blue/green category.  I am not a bit fan of blue polishes but this is a really nice shade of blue! It's not yet periwinkle but very close to it! I am in love with Essie's formula. It's very similar the Butter London but it took two to three coats to get a solid color. 




This is definitely a colour that can match summer. I can see this paired up with floral prints, pastels, and of course black and white! By the way, just in case if you're wondering, this is one of Essie's most shared colour on Twitter :)

Maybelline Babylips Swatch || Product Review

I am in love with Babylips! When Maybelline came out with these, people went crazy over them and I can see why! If you are looking for a tinted lip balm, this is a good and an inexpensive solution. I first bought two from the original collection. I thought I was set until Maybelline came out with a limited edition line and bought two of those. I wish I had bought the rest of the limited editions because the colours are so much better than the original line. Now, the product has been out on the market for quite awhile and my review is a bit (more like way) behind. But I might as well.



Just to give you general idea of Babylips. The product comes in a tube packaging and comes out like a normal lip balm or lipstick (twist bottom). I love my lip balms and lips salves because of its hydrating properties. On the packaging, it says that your lips with stay hydrated up to 8 hours. I say it will last 6 hrs and you will need to re-apply. Now lets go to the reason why I really love babylips! When I go out, I want to layer on a colour and sometimes my lipstick just slides right off when I layer it over my balms. When I discovered the Babylips, I was so excited! No more fussing over lipstick (I still use lipstick occasionally) and now I just carry this with me! 

First, from the original collection, is Peach Kiss. I have a couple of friends who have this on hand and I thought it would be nice neutral to have. I can't say that I'm disappointed, but I will say that it's not my favorite. It does have some colour but it's quite sheer and it really just gives a nice sheen to your lips. Now, on the opposite side of the spectrum -- Pink Punch! And punch is right; it's a bright hot pink colour and will definitely give your whole look a burst of colour. I wasn't expecting it to be so bright but after using it a few times, I got use to the colour. It's not as sheer as Peach Kiss and and gives you a good amount of colour but it's not as intense as lipstick (which I like).



Now from the limited edition line. First -- Yummy Plummy is a must in my purse and I always make sure I have it with me. It's not quite purple but more of a mauve with a pink undertone. This is a great neutral with a slight splash of colour. The last one that I have is Melon Mania. Right of the bat, I was a little scare of this colour; the hue of Melon Mania looked brighter in the tube than Pink Punch. After applying it, I was surprised to see how sheer it was compared to Pink Punch. If you are looking for a touch of pink, this is the one you should go for. Out of the four Babylips, I definitely use the limited edition colours more.Now when I say limited edition, I mean you can't find it in stores anymore. If you hop over to Amazon, you can find people that are selling the full limited edition line! But keep your eyes peeled; you never know if they will hit the shelves again!
